About Chef Mark:
My first experience with cooking was when I was very young.
I remember saying that I
did not like the food I was served and I was told if I did not
like it then I should cook for myself. Ever since then I have
cooked for myself, all of my friends and family.
At 16 I worked as an AC (Alley Coordinator)
for Red Lobster.
As an AC my primary responability was quality control. I
basically kept
an eye on the food presentation, how the food tasted and made
sure the food was prepared properly.
I went on to graduate from high school and followed the
direction of my
other passion as a fire fighter for the U.S. Forestry
Department. Ironically enough, during training I complained
about the food and the instructors told me that if I do not
like the food then I can go back in the kitchen and cook the
meals myself. So I did just that.
Towards the end of my training I was selected to be sent to
a Culinary Arts School to take accelerated cooking classes. The idea was
that the U.S. Forestry Department needed a few of us to be able to cook for our own
individual squads. I cooked for my squad for several years after that
without one single complaint. I soon got the nickname of "Chef Pyro"
and the name has stayed with me to this day.
I am now retired from fire fighting and have been
cooking for my friends, family and neighbors as often as they
would let me. Several of the people I cook for always ask me
for my recipes and would also ask me if I could teach them how
to cook. Then I came up with the idea of opening "Culinary Arts
Tutor" and helping others discover the chef in them.
Cooking is my passion and I am looking forward to spreading
that passion on to you.
